If you find yourself with too many cucumbers...
- 2-3 cucumbers
- minced garlic
- 3 eggs
- olive oil
- salt, pepper
- Soy sauce
Remove seeds from cucumber, and cut into thin slices.
Add salt and set aside for 20 min.
Beat eggs with salt and soy sauce.
Rince cucumber and dry on paper towels.
Sauté garlic in oil. Add cucumbers and stir fry for 1-2 min.
Push cucumber to one side of pan and add eggs. Lower temperature.
Let the eggs set then toss around everything.
Serve with pepper.
