Giouvarlakia trahanas
A soup with balls, that looks like the perfect material to block off wall cracks for winter insulation.
Ingredients
Balls
- 600 gr minced chicken
- 150 gr trahanas sour
- 1 egg
- 1 large onion
- Estragon
- 1 Tbsp paprika
- 1 tsp ginger
- grated peel from 1 lemon
- salt, pepper
Soup
- About 2 lt water
- vegetable stock
- 200 gr trahanas
- 2 eggs
- 3 lemon juice
- salt, pepper
Preparation
This is a quick and easy food, with some twists such as the paprika and chicken.
Food process all the ball ingredients except the mince. Mix everything with the mince by hand and make small balls.
Boil the water and add the vegetable stock with salt and pepper.
Add the balls and switch to medium heat. Boil for about 15 min.
Add trahanas and mix well so it doesn't stick on itself, and cook for a further 15 min.
Remove from heat.
Make a weak marenge with egg whites, and add lemon juice and egg yolks. Slowly add some of the soup in the egg mix and stir, to warm it up gently. Once most of the soup has been mixed with the eggs, pour back in the soup container and mix well.
Follow the tradition by serving with feta.
